Making Kataifi Strings for Künefe and Dubai Chocolate #كنافة
The player loads from YouTube only when you press play.
Near Luxor’s train station on the East Bank, we found a stall pulling long threads of kataifi dough onto a spinning hot plate, the pastry base for künefe and, more recently, for the Dubai chocolate everyone online seems to want a version of. The dough came off in impossibly thin golden strands, pulled and cut by hand with no measuring involved at all. We stood close enough to feel the heat, watching a skill that takes years to get this fast.
