A new sushi bar opened close to our apartment in Valencia, and walking in genuinely felt like being transported straight back to Tokyo, a city we spent an extended stretch living in and have missed ever since leaving. We filmed the interior and a few dishes being prepared, the attention to detail matching what we remember from actual Tokyo sushi counters rather than a diluted, adapted version of one. Finding it this close to home was a genuine surprise.
