The oyster farm tour ended up being the single best thing we did during our month in Whitstable, and we could not have picked a better day for it – not a cloud in the sky and the tide all the way out. After walking out to see the beds themselves, the tour continued back at the factory, where we watched the oysters get sorted and graded before finally sitting down to taste a few, fresh and about as local as food gets.
