Patatas bravas gets treated as a throwaway tapa in a lot of places, but in Valencia the good versions earn the reputation properly, crispy potatoes carrying a spicy salsa brava with real depth alongside a cool, garlicky alioli that balances the heat out. We ordered a plate just to film it and ended up finishing the whole thing before we had captured half the shots we wanted. Some dishes are simply too good to treat as background material for very long.
